Life update: I've decided to go vegetarian. For a time a least. My whole life I've been an animal lover. I grew up on a dairy farm (with farmers who loved their animals, but that's a post in and of itself), loving my cows, helping to raise farm dogs, and taking care of kittens that would get dropped at the farm. For as long as I can remember, I've been drawn to any and all animals.
Those of you who know me well know that I love to eat. I've never been one to be able to diet - I lack the needed discipline, oops! - or even cut back on foods that I love. When I get a craving for something, I eat it. I'm a self proclaimed foodie who'll eat anything. Recently, I forewent this thinking and ditched meat for eight days. Here's what happened.
Cooking for one or two people can be hard and somewhat expensive. Recipes seem like they're meant for a family of four and prepackaged items are in the same boat, and when you're on your own you tend to waste a lot of food. At least that's what happens to me. I'm constantly on the lookout for meals that are easily made for small portions or make excellent leftovers, and the good news is that this one is perfect for both.
